Recipe: The Best Chocolate Chip Cookies

If you're wanting to pleasure someone or just yourself today then this is the recipe that will do it.
Quite simply (and unbiasedly) it's the perfect chocolate chip cookie: crumbly and short on the outside, doughy and delicious on the inside.
The recipe is based on the signature cookie by Levain Bakery in New York City. Though I've never been there, through a brilliant friend I have managed to try their wares (she carried a box of cookies all the way from the USA to Australia - epic!).
Since that earth-shattering moment I've been trialling recipe after recipe and tweaking tiny elements, to recreate the flavour and texture of the original. And I believe I finally have it (in HUGE part thanks to Modern Honey's recipe) but mine comes with two golden rules:
Have the right scoop
And get that dough cold
