Recipe: Smoky Prawn Cocktail
The first Christmas recipe I'll be featuring from my column in this month's Village News is one from restaurant owner and head chef, James Gallagher.
James opened the doors to his new eatery Allium just weeks ago after building up a resume working in restaurants across his hometown of London, then top dining rooms around Brisbane (Alchemy & Privé249).
James has shared his unique take on a prawn cocktail. It's superior to others I've tried because he makes everything from scratch.
"It's super retro but super good. Back when I was a kid it [prawn cocktail] was a very posh dish. It’s sort of working both traditions into it, great for this Australian weather; fresh and easy. Christmas morning no one wants to be slaving over a stove," he says.
