Recipe: Easy Ricotta & Spinach Cannelloni
There ain't no party quite like an Italian party, so when I caught up with Maria (of New Farm Deli & Café) for this month's Village News column and she told me she and her husband Vince would be hosting Christmas lunch for 30+ people (that's family only!) and they'd need to put up a marquee, I wasn't surprised.
It's only fitting then Maria shared this classic Southern Italian dish that's eaten mostly at festive occasions and that's easy as pie. The Ricotta & Spinach Cannelloni can be prepared ahead of time and simply popped in the oven to do its thing (and smell delicious!) as guests arrive.
My husband (the ever eager recipe tester) was thrilled with it - a good tummy filler for Christmas Eve perhaps?
