Recipe: Barbara's Mulberry Muffins
There are few things better than enjoying a cup of tea (iced or hot) with a treat fresh from the oven. My friend Barbara shared her own Mulberry Muffins recipe with me last week, claiming they're, "the only thing she can cook". Though I doubt this, they are undoubtedly sensational.
I noticed she sifted the flour up to four times because "it adds more air to the mixture" and this did seem to make a difference. Barbara also uses mulberries because she has a lush bush of them that grow in her backyard come September, but I think you could substitute them for almost any sweet berry in this recipe.
I love when a surplus of homegrown food inspires cooking. Do you have any treasured recipes that have started this way? Unfortunately I don't yet, a fat possum continues to midnight feast on my herbs!
